Many ‘blessed days’

Since the start of this year I have been trying to capture my blessings, grateful moments in a journal. I call this my ‘gratitude diary’. Yes, I am not easy all the time to be grateful and happy. However I am making a conscious effort to be cheerful and happy in life!

When I came across, The Blessed Project, by Susie on her blog, https://susielindau.com/2016/11/22/join-the-blessed-project-and-link-up-your-blog/, I immediately thought of sharing my blessings via my blog.

Here are some of my many blessings for which I am ever grateful:

My daughter

The apple of my eye! She lights my world and am blessed to have such a wonderful, cherubic daughter.

I feel blessed when I can capture aesthetic food photos. And am thankful that I can cook good food, too.

Beautiful sights! Ah! Am blessed that I can explore India, my beautiful country.

Indeed a blessing to have fun times with my siblings and their families!

Now, I  would like to share the recipe for this simple, yet yummy, filling treat, Biscuit Fruit delight, shared by my dear colleague Anjali Naware.

Biscuit Fruit delight: A joyful jumble of flavors of rich cream blended with crunchy fruits and biscuits!

Instructions
  1. Crush the biscuits and add melted butter to it. Mix well.
  2. Cut the fruits into small pieces and add these to a bowl. Add fresh cream to it. Mix well.
  3. Take a serving bowl or paper cup and add one layer of the crushed biscuits at the base of it. Top this up with fruit cream. Decorate with your favorite fruits.
  4. Yummy biscuit fruit delight is ready to be savored. You can either savor it once prepared or store it in the refrigerator and relish it when required. Ensure you consume it within a day.
